4 eggs, separated
2 lbs cream cheese
1¾ cup sugar
1 grated lemon rind
juice of 1 lemon
1 teaspoon vanilla
Heat oven to 325 degrees.
Mix egg yolks, cream cheese, sugar, lemon rind, lemon juice and vanilla in a large bowl until smooth. Add egg whites and beat until smooth. Place ½ inch warm water in cake pan. Pour batter in another cake pan and put on top of cake pan with water. Bake for 1½ hours. Turn off oven and let set in oven for ½ hour.
