Pumpkin is a versatile food that can easily be added to many of your favorite recipes.
EXTRACTING PUMPKIN
Pumpkin can be easily extracted from its shell by following these easy steps.
1. Cut top off pumpkin
2. Remove seeds from pumpkin
3. Replace pumpkin top and place in 375-degree oven
4. Bake 20 minutes
5. Remove lid and scoop out pumpkin flesh
6. Dice or mash pumpkin
PUMPKIN BREAD SUPREME
(Makes 3 loaves)
3-1/2c flour
2t baking soda
1/2t baking powder
1t salt
3c sugar
1t pumpkin pie spice
1t cinnamon
1c applesauce
4 eggs
15oz. pumpkin puree
1/4c water
Preheat oven to 350-degrees.
In mixing bowl combine flour, salt, soda, baking powder, cinnamon, sugar and pumpkin pie spice. Mix well. Stir in applesauce. Mix in eggs, pumpkin and water. Blend batter with electric mixture until smooth and creamy. Pour batter into well greased bread loaf pans and bake 50-60 minutes.
PASTA WITH PUMPKIN SAUCE
(Serves 4)
2T butter
6 shallots, peeled and chopped
1/2c broth, chicken
1-1/2c canned pumpkin
1c sour cream
4T parmesan cheese, grated
1/4t dry mustard
1/4t nutmeg
Black pepper and salt to taste
1lb. pasta
In large saucepan, cook shallots in butter until soft. Mix in broth and simmer slowly. Stir in pumpkin, cream and cheese. Reduce heat and simmer five minutes. Add nutmeg, mustard, pepper and salt. Cook over low heat 20 minutes.
To serve, toss cooked pasta with sauce and top with grated cheese.
PUMPKIN CHEESECAKE
7 egg whites
2 egg yolks
1-1/2lb. ricotta cheese
1c sugar
1-1/2T vanilla
1-1/2c pumpkin puree
1t pumpkin pie spice
1t baking powder
Preheat oven to 350-degrees.
Beat egg whites until stiff. Mix cheese with egg yolks, sugar, pumpkin, vanilla, pumpkin pie spice and baking powder. Slowly fold in egg whites. Pour mixture into greased and floured 8-inch springform pan. Bake 50 minutes to 1 hour. Remove from oven and allow to cool. Refrigerate overnight before serving to allow mixture to settle and harden.
PUMPKIN CHILI
(Serves 6)
1 pumpkin, medium sized (or 2 cups solid packed pumpkin)
1 onion, chopped
1 clove garlic, minced
1 red bell pepper, diced
2T vegetable oil
1lb. beef
4c tomatoes, diced
2c tomato sauce
2c kidney beans, cooked
1c corn
1/2c green chilies (optional)
1T chili powder
1t cumin, ground
Salt and pepper to taste
Cut top off pumpkin. Remove seeds from pumpkin and replace lid. Bake entire pumpkin in 375-degree oven for 20 minutes. Scoop out pumpkin flesh. Dice pumpkin and set aside with pumpkin shell.
In saucepan, saute onions, garlic and peppers in oil until tender. Add ground meat and cook until browned. Drain grease. Add tomatoes, tomato sauce, pumpkin, kidney beans, corn, chilies, chili powder, cumin and salt and pepper. Bring to a boil and then reduce heat, covering and simmering 30 minutes.
Serve in pumpkin shell and garnish with freshly shredded cheese and sour cream.
